Espresso Chocolate Chip Cookie Thins

Ingredients
- 1 cup whole wheat flour
- 1 cup almond flour
- 2 Tbsp. espresso powder
- 6 Tbsp. unsalted butter
- 1/2 cup brown sugar
- 2 Tbsp. maple syrup
- 2 eggs
- 1 tsp. vanilla extract
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup dark chocolate chips
Instructions

Preheat oven to 350 degrees F. In large mixing bowl, use hand mixer or stand mixer to beat butter and eggs.

Add brown sugar, almond and whole wheat flours, espresso powder, vanilla extract, maple syrup, baking soda and salt. Mix well.

Fold in chocolate chips. Refrigerate 20 minutes.

Spray baking sheet with nonstick spray. Place spoonfuls of dough onto sheet about 2-3 inches apart. Bake 11-13 minutes until edges are crisp and the center is soft.
