Ingredients
- Ghee
- 1 large cauliflower head cut into small florets
- ½ cup kefir
- ½ cup goat's milk cottage cheese pureed
- 1-½ tsp. Dijon mustard
- 1-½ cups grated sheep's or goat's milk cheddar cheese plus more for topping
- 2-3 scoops Ancient Nutrition Keto Collagen
- ⅛ tsp. garlic powder
- ½ tsp. black pepper
- 1 tsp. sea salt
Instructions

Preheat oven to 375 degrees F. Using ghee, grease 8”x8” pan.

Bring pot of salted water to boil. Cook cauliflower until slightly tender, about 5 minutes. Drain; pat dry and evenly spread into prepared pan.

In large saucepan over medium-high heat, mix together kefir, cottage cheese and mustard until smooth. Stir in cheese, collagen powder, sea salt, pepper and garlic powder until cheese just starts to melt.

Pour sauce over cauliflower; stir. Top with additional cheese if desired. Bake 10 to 15 minutes.
