Ingredients
- 1-1/3 cup rolled oats
- 1 Tbsp. chia seeds
- 2 tsp. pumpkin spice
- 1 tsp. cinnamon
- 1/4 tsp. baking powder
- 1/4 tsp. salt
- 1/2 cup almond milk
- 1/2 cup pumpkin puree
- 1/4 cup maple syrup
- 1 tsp. vanilla extract
- 1/4 cup chopped pecans
- 1 Tbsp. pumpkin seeds
Instructions

Preheat oven to 350 degrees F. Grease loaf pan with coconut oil. Set aside.

In large bowl, add oats, chia seeds, spices, baking powder and salt.

In medium bowl, whisk together milk, pumpkin puree, maple syrup and vanilla extract.

Add liquid to dry ingredients and mix to combine.

Pour oatmeal into loaf pan. Sprinkle pecans and pumpkin seeds on top of oats. Bake for 15 minutes.
