Rustic Gourmet Salad With Homemade Lemon Vinaigrette

Ingredients
Salad
 6 cups organic leafy greens (baby lettuce mix, spring greens)
 10 artichoke hearts
 20 organic pitted green olives
 1 cucumber, sliced into wedges
 2 cups cooked white beans
Dressing
 2 Tbsp. lemon-infused olive oil
 2 tsp. champagne vinegar
 Pinch salt and pepper
 Pinch dried oregano
Directions
- Arrange leafy greens on 2 plates.
- Layer on each plate: 5 artichokes, 10 olives, half cucumber, 1 cup beans.
- Whisk dressing together and drizzle on top of each salad.
