Clean-Eating Pecan French Toast

When it comes to nuts for breakfast, walnuts often steal the show: banana-walnut muffins, apple-walnut oatmeal, date and walnut bread.  For tomorrow’s morning meal, why not rise and shine with a different, protein-packed, tasty topping? Pecans not only pair perfectly with maple syrup, they’re loaded with plant nutrition, especially antioxidants, fiber, vitamin B-1 and the mineral manganese. Sprinkle them on a stack of simple, clean-eating French toast – made with sprouted-grain or gluten-free bread – and the stage is set for a healthy day!

Clean Eating Pecan French Toast

Ingredients

2 slices cinnamon raisin Ezekiel bread
2 whole eggs
1 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. vanilla extract
1/3 cup chopped pecans
Maple syrup, to taste
Spray coconut oil or coconut oil, for greasing pan

Directions

  1. In frying pan, heat coconut oil over medium low. (Note: Use just enough coconut oil to coat bottom of pan.)
  2. In large bowl, whisk together eggs; mix in cinnamon, nutmeg and vanilla until smooth.
  3. Dip bread fully in egg/spice mixture and place in frying pan. Cook evenly on both sides crisp to your liking.
  4. Top French toast with chopped pecans and maple syrup. I like to add sliced strawberries to mine as well!
