Casseroles don’t have to be complicated. In fact, in earlier times, they were mainly a way to put leftovers to use. Stir in a few fresh ingredients, bake and a whole new dinner was made. Today, a glass-dish creation can be a work of art—but it doesn’t have to be. When your flock is hungry, and time is tight, fall back on a simple, old-time favorite: shepherd’s pie. This lighter, healthier version is made with lean turkey instead of traditional beef, with nutritious sweet potatoes for the topping.
Sweet Potato Shepherd’s Pie
Serves 4
Ingredients
2 large sweet potatoes
 ¾ lbs. lean turkey
 1 (14.5 oz.) can stewed tomatoes
 1 (14.5 oz.) can salt-free green beans
 Salt-free seasoning
 Worcestershire sauce, to taste
Directions
- Preheat oven to 35 degrees F.
 - Use non-stick spray to coat 8” square baking dish.
 - Boil sweet potatoes, cut into small chunks, until mashable. Mash potatoes.
 - In frying pan, cook turkey sprinkled with seasoning until browned.
 - Combine turkey, tomatoes and green beans and add Worcestershire sauce to taste. Spread mixture in pan, then top with mashed potatoes.
 - Bake shepherd’s pie for 25 to 30 minutes, broiling for 5 minutes near end for a crispy top.
