Cinnamon buns don’t have to be doused with drippy, sticky, artificially flavored icing to be irresistible. Walk on past that cinna-shack in the mall and create your own sweet snack with more sophisticated ingredients. Gluten free and vegan, these raisin-studded rolls are made with wholesome chickpea and buckwheat flours, plus just the right combination of dairy- and egg-free add-ins for the perfect soft and chewy texture. A light, simple cinnamon glaze tops them off, keeping your fingers – and healthy-eating conscience – clean.
Gluten-Free Pull-Apart Cinnamon Raisin Buns
Makes 1 dozen
Gluten free * dairy free * soy free * vegan
Ingredients
Yeast starter
 ½ cup warm water
 2-1/4 tsp. (1 pkg.) quick-rise yeast
 1/2 tsp. cane sugar
Dry ingredients
 1 cup arrowroot powder
 1 cup chickpea flour
 1/3 cup + 2 Tbsp. buckwheat flour
 2 tsp. cinnamon
 1-1/2 tsp. xanthan gum
 1/2 tsp. sea salt
 ¼ cup cane sugar
Wet ingredients
 ¼ cup extra-virgin olive oil
 2/3 cup unsweetened almond milk
 ½ cup raisins
Glaze topping
 2 Tbsp. unsweetened almond milk
 1 tsp. cinnamon
 1 tsp. cane sugar
Directions
- To prepare yeast mixture, combine water, sugar and yeast in small bowl; let mixture sit for 10-15 minutes.
 - In large bowl, combine sugar, cinnamon, salt, xanthan gum and flours. Stir in yeast mixture, oil and milk and mix well. (Note: Mixture will be sticky.) Stir in raisins. Cover bowl with towel and let dough rise for 1-1/2 hours.
 - Use parchment paper to line rimmed baking sheet; sprinkle paper with flour.
 - Cover hands with flour. Grab a small ball of dough, shape into a ball and place on baking sheet. Arrange buns together, 3 across/4 down. Cover buns with towel and let rise 1-2 hours.
 - Preheat oven to 375 degrees F.
 - In small bowl, combine glaze ingredients and mix well. Use pastry brush to apply glaze to buns. (Note: Not all of glaze will be used.) Sprinkle buns with cinnamon/sugar.
 - Use knife to cut criss-cross pattern across tops of buns.
 - Bake buns for 20-25 minutes or until lightly browned.
 - Store buns in airtight container or zipper-lock plastic bag. If desired, reheat briefly in oven before serving.
