Baked Salmon With Balsamic Berry Glaze
Ingredients
½ cup balsamic vinegar
1 heaping cup frozen mixed berries
4 salmon filets
Black pepper, to taste
Smoked paprika, to taste
Directions
- Preheat oven to 375 degrees F.
- In a medium-sized saucepan, combine berries and balsamic vinegar. Simmer mixture over medium heat for about 20 minutes. Remove from heat and let thicken for 5 to 10 minutes.
- Spray a foil-lined baking sheet with non-stick spray. Arrange salmon on sheet and season with smoked paprika and pepper.
- Bake salmon for 15-20 minutes.
- Serve salmon topped with berry glaze.
