Roasted Red Pepper Salad Dressing

For many, a flavorful dressing is what turns a bowl full of plain greens and veggies into a palatable meal. When oil and vinegar or fresh lemon juice doesn’t quite do it, add some extra flare by making this simple roasted red pepper dressing. It combines the smoky flavors of paprika and cayenne with garlic and sweet honey for great-tasting salad topper! Omit the water and you can serve it up as a fresh dip with cucumber slices and broccoli florets.

Ingredients

2 red bell peppers
1/3 cup Vitacost Organic Extra Virgin Olive Oil
1/4 cup water
3 Tbsp. balsamic vinegar
1 Tbsp. Vitacost Organic Raw Honey
1/4 tsp. smoked paprika
1/8 tsp Vitacost Organic Cayenne Pepper
1 garlic clove
1/2 tsp. kosher salt

Directions

  1. Cut peppers in half, core and de-seed.
  2. On broiler pan, arrange peppers skin up. In oven, place pan around two inches from heat and broil on high for 8-12 minutes until skins blister.
  3. Place peppers in bowl and cover with lid to cool. Once cool enough to handle, peel off loose skin.
  4. In food processer or blender, combine peppers with remaining ingredients and blend until smooth.
