Walnut Chocolate Chip Cookies

Small tweaks can make a big impact. Maybe you’ve gotten this advice from a personal trainer or dietitian, who encouraged you to take baby steps toward a larger goal. As true and useful as that notion is for creating long-lasting health habits, it’s equally true for your desserts. Think of it this way: Baking a batch of chocolate chip cookies is really just doing more of the same. But you could make one small change to the recipe – like adding walnuts – and have an entirely new cookie in your jar. Now, that advice doesn’t sound so nutty, does it?

Ingredients

1 cup oat flour
1 cup almond flour
1/2 cup sugar
1/3 cup melted coconut oil
1 tsp. vanilla extract
Unsweetened almond milk
1 cup dark chocolate chips
1/2 cup walnut pieces

Directions

  1. Preheat oven to 350 degrees F.
  2. In large bowl, combine all ingredients except almond milk. Stir until well combined.
  3. Slowly add milk until mixture forms a sticky dough consistency.
  4. Fold in dark chocolate chips and walnuts.
  5. Roll cookie dough into one-tablespoon-sized balls and place on a non-stick baking sheet. Use your fingers or the back of a spoon to flatten dough into cookie shape.
  6. Bake about 12 minutes, or until edges begin to turn golden.
