If your family members have multiple dietary restrictions, meal times can be problematic. What do you serve? Can you really find a dish to please everyone? This recipe for baked mushroom bites will do just that! These garbanzo-battered bites are vegan, gluten-free and served with a delicious sweet and sour mustard sauce, so the whole gang will munch happily.
Ingredients
1 cup garbanzo bean flour
1/2 tsp. nutritional yeast
1/2 tsp. garlic powder
1/2 tsp. salt
10-15 baby portobellos
1 cup water
Chives, diced, to garnish
Sauce
1-1/2 Tbsp. organic mustard
3 Tbsp. organic agave
1-2 tsp. hot sauce or paprika (adjust to taste or omit)
Directions
- Preheat oven to 375 degrees F. Lightly grease a baking sheet with oil.
- Remove mushroom stems. (You may want to remove top layer or skin of mushroom so batter sticks better to the batter.)
- In a medium bowl, whisk all batter ingredients together, except mushrooms and chives, until fully incorporated and smooth. With a fork, dip each portobello into batter to coat. Tap off excess batter and place on baking sheet.
- Bake for 8-10 minutes. Then broil for 2-3 or until dark and golden.
- Meanwhile, in a small bowl, mix together all sauce ingredients.
- Remove from oven and let cool. Drizzle sauce over top and sprinkle with chives.
