Kill that craving without overdoing it on sugar with these bite-sized, matcha-infused almond butter cups. Not only are they made with natural stevia instead of processed white sugar, but they come with loads of antioxidant power and an energizing kick from protein powder. Bye-bye, vending machine. There’s a new candy in town!
Almond Butter-Matcha Cups
Ingredients
Almond Butter Layer
1 scoop vanilla whey powder
1 ½ Tbsp. coconut oil
¼ cup almond butter
Matcha Layer
½ cup coconut flour
1 scoop vanilla whey powder
2 tsp. matcha powder
½ cup desiccated coconut
1 cup coconut oil
¼ cup stevia
¼ cup maple syrup
Directions
- Line mini muffin pan with paper liners and set aside.
- In large bowl, combine whey, coconut oil and almond butter; mix until smooth.
- Pour mixture into muffin liners, filling each about about half way.
- In another bowl, combine remaining ingredients and mix until smooth.
- Spoon matcha mixture over almond butter layer in liners.
- Freeze cups for about 20 minutes or until firm.
