Caramel Apple Granola

Ingredients
- 4 cups rolled oats
- 1 cup honeycrisp apple peeled and diced
- ¼ cup maple syrup
- ½ cup Medjool dates pitted
- ¼ cup almond butter
- 1 tsp. vanilla extract
- Pinch salt
Instructions

Preheat oven to 300 degrees F. Line baking sheet with parchment paper.

In small blender jar, combine all ingredients except oats. Blend until smooth to create apple “caramel” sauce.

In large bowl, combine sauce with oats and mix until evenly incorporated.

On prepared baking sheet, spread out oats in single layer. Bake for 1 hour, stirring every 15 minutes and breaking up any big chunks that form.

Remove from oven and let cool completely before transferring to an airtight container.

Serve as a topping to coconut yogurt, as a cereal with dairy-free milk or on its own as a snack.
