Seasoned Baked Beet Chips

Who couldn’t use a new healthy snack to work into their rotation? If the midday munchies keep sabotaging your new diet plan, try keeping these baked beet chips on hand. Made with only real-food ingredients, they’re way more wholesome than anything you’ll find in the vending machine or the nonperishable aisle of the grocery store. We bet they’d be great dipped in some homemade hummus too!

Ingredients

1 lb. beets, sliced 1/4” thick
2 Tbsp. extra virgin olive oil
Juice of one lime
Pinch of sea salt
Rosemary (optional)

Directions

  1. Preheat oven to 350 degrees F.
  2. In small bowl, combine oil, lime juice, salt and rosemary (if using). Mix well.
  3. Place beet slices in large bowl and generously coat with dressing. Arrange on baking sheet.
  4. Bake 10 to 12 minutes, or to desired crispness.
