Banana Bread Muffins with Collagen & Chaga

Ingredients
- 1/2 cup Once Again Peanut Butter
- 2 Tbsp. YS Eco Bee Farms Raw Honey or maple syrup
- 1 Tbsp. Organic Valley Ghee
- 1 tsp. Simply Organic Vanilla Extract
- 3 very ripe bananas mashed
- 3 pasture-raised eggs
- 1/3 cup + 2 Tbsp. Nutiva Organic Coconut Flour
- 3 Tbsp. Vital Proteins Collagen Powder
- 1 tsp. Bob’s Red Mill Baking Powder
- 1/2 tsp. chaga mushroom powder
- Pinch Badia Pink Himalayan Salt
Instructions

Preheat oven to 350 degrees Line muffin tins with paper liners or grease with non-stick spray.

In large mixing bowl, combine peanut butter, honey, ghee, vanilla, mashed bananas and eggs.

Slowly mix in remaining ingredients and stir together until combined.

Spoon into muffin tins, filling about 3/4 of the way up.

Bake for 20-25 minutes, until the tops “bounce back” when you tap them with your finger or until a toothpick inserted in the center comes out clean.
