Banana Bread Muffins with Collagen & Chaga

There are a bunch of banana bread recipes out there, but we think this one takes the cake, or in this case, the muffin! With chaga mushroom powder, collagen, ghee, raw honey and coconut flour, these rich banana bread muffins do your body good. They’re easy to make and totally versatile, so feel free to switch and swap ingredients based on your preferences or what you have on hand. Make these at the beginning of the week and grab one when your body needs fuel on the go!

Banana Bread Muffins with Collagen & Chaga

Instructions

  1. Preheat oven to 350 degrees Line muffin tins with paper liners or grease with non-stick spray.
  2. In large mixing bowl, combine peanut butter, honey, ghee, vanilla, mashed bananas and eggs.
  3. Slowly mix in remaining ingredients and stir together until combined.
  4. Spoon into muffin tins, filling about 3/4 of the way up.
  5. Bake for 20-25 minutes, until the tops “bounce back” when you tap them with your finger or until a toothpick inserted in the center comes out clean.
