Simply blend a banana with a cup of coconut milk, a scoop of chia seeds and some cinnamon, chill for about an hour, and you’ve got the perfect single-serving dessert–sweet, creamy and (bonus!) packed with potassium, protein and omega-3s.

Banana Chia Pudding
Serves 1
Ingredients
1 banana
1 cup of coconut milk or almond milk
1 Tbsp. chia seeds
1 to 2 tsp. cinnamon
Directions
1. Combine all ingredients in blender. Blend until smooth.
2. Refrigerate pudding for at least an hour before serving.
