Berry Breakfast Pancake Pizza

Is it a pancake or a pizza? It’s the best of both worlds and your kids will love this recipe! Bored of the same old breakfast, turn a pancake into a weekend project with the kids. A healthy protein pancake is topped with an array of berries and homemade granola, but why stop here? You can top with any of your favorite toppings.. made either savory or sweet, this pizza pancake will deliver a nutrient packed breakfast in every slice!

Breakfast Pizza Pancake Recipe

Berry Breakfast Pancake Pizza

Ingredients

Pancake
Makes 2 Servings

1 Tbsp. coconut flour
½ cup oat flour
¼ cup vanilla protein powder
½ tsp. baking powder
2 Tbsp. nonfat Greek yogurt
½ cup unsweetened vanilla almond milk
½ tsp. vanilla extract
½ tsp. butter extract

Yogurt Sauce

1 Tbsp.unsweetened vanilla almond milk
¾ cup nonfat Greek yogurt
½ Tbsp. honey
½ tsp. vanilla extract

Toppings

homemade granola
berries: raspberries, strawberries, and blueberries

Directions

    1. In a large bowl mix together flour, oats, protein powder and baking powder.
    2. Stir in the yogurt, milk, vanilla and butter extract and mix until smooth.
    3. Spray a large griddle or pan with non-stick cooking spray, and heat to medium low .
    4. Split the batter in half and drop onto the hot griddle, once cooked flip over pancake to cook the other side.
    5. In a blender or food processor mix yogurt, milk, vanilla and honey until well blended.
    6. Spread the yogurt sauce over top each  cooked pancake.
    7. Sprinkle with granola and berries.

Slice and enjoy!
