Berry-Glazed Baked Salmon Filets

Salmon is an excellent way to increase your intake of omega-3 essential fatty acids—a must for heart health, according to the American Heart Association. Fish dishes at least twice weekly is the recommended amount. So how do you keep from getting bored? Let go of lemon and garlic and sweeten your meal with the season’s best offerings—fresh summer berries. Simmered in balsamic vinegar and spooned over an oven-baked filet, fruit becomes the topping that takes salmon to an enjoyable-anytime level.

Berry-Glazed Salmon Filets

Baked Salmon With Balsamic Berry Glaze

Ingredients

½ cup balsamic vinegar
1 heaping cup frozen mixed berries
4 salmon filets
Black pepper, to taste
Smoked paprika, to taste

Directions

  1. Preheat oven to 375 degrees F.
  2. In a medium-sized saucepan, combine berries and balsamic vinegar. Simmer mixture over medium heat for about 20 minutes. Remove from heat and let thicken for 5 to 10 minutes.
  3. Spray a foil-lined baking sheet with non-stick spray. Arrange salmon on sheet and season with smoked paprika and pepper.
  4. Bake salmon for 15-20 minutes.
  5. Serve salmon topped with berry glaze.
