Broccoli & “Cheeze” Stuffed Chicken

Smother broccoli in cheese, and there’s no resisting that plate of healthy greens. But the half-cup serving of dairy brings you back a bit, nutritionally speaking. Get your veggies, plenty of protein and all the gooey goodness of your favorite bright-orange cheese—without using a single shred of cheddar. The secret is in this simple homemade “cheese” sauce, made with spices and nutritional yeast!

Broccoli & “Cheeze” Stuffed Chicken

Makes 4 servings

Ingredients

3-4 chicken breasts (boneless/skinless)
½ cup unsweetened almond milk
4 Tbsp. nutritional yeast
2 Tbsp. coconut flour
1/8 tsp. each: mustard powder, garlic powder, onion powder
Salt and pepper, to taste
1 head broccoli, chopped and steamed

Directions

  1. Preheat oven to 375 degrees F. Spray baking sheet with non-stick spray.
  2. In large bowl, combine all ingredients except chicken and broccoli; mix well. Stir in steamed broccoli.
  3. Butterfly chicken and stuff with broccoli mixture. Sprinke with salt and pepper to taste.
  4. Bake chicken for 40 to 40 minutes.
