Sugar cone or waffle cone? It’s the last choice you have to make, and it’s not an easy one. You love the hard crunch of the sugar cone and the race to finish your ice cream before it starts dripping out the bottom. But a waffle cone is much more practical – and just as sweet. Your best bet? Make these mocha brownie waffles. They hold a scoop of ice cream like a cake topper. And if the sweet stuff starts to melt, just let it pool in the wells of your waffle. Decision – made!
Ingredients
2 eggs
1-1/4 cup all-purpose flour
1/2 scoop MRM Veggie Elite Chocolate Mocha Protein Powder
1/4 cup unsweetened cocoa powder
1/2 cup sugar
2 Tbsp. vegetable oil
2 Tbsp. water
1/4 tsp. salt
Pistachio gelato or ice cream (optional)
Directions
- Preheat waffle iron.
- In a small bowl, beat eggs and set aside.
- In a large bowl, add dry flour, protein powder, cocoa powder, sugar and salt. Stir until well combined.
- Coat waffle iron with non-stick cooking spray.
- Pour 1/2 cup batter per waffle into waffle maker. Close and let cook through.
- Once done, remove and place on a cooling rack. Continue until all batter is gone.
- Serve with a scoop of gelato or ice cream and a drizzle of chocolate sauce.
