Cacao & Almond Popcorn Balls

Sweet or salty? Can’t decide which taste to snack on? Cave to both cravings with a healthy treat that’s fun to make! You may remember classic popcorn balls being overly sweet, sticky and not very satisfying. This spruced-up version replaces heavy corn syrup with honey and coconut oil, and almonds and cacao nibs are added in for extra protein, antioxidants and a touch of “gourmet.”

Cacao & Almond Popcorn Balls

Makes 16 popcorn balls

Ingredients
1 bag organic microwave popcorn
1 Tbsp. coconut oil
4 Tbsp. honey
¼ cup slivered almonds
¼ cup chocolate covered cacao nibs

Directions

  1. Microwave popcorn according to package directions. Arrange popcorn on baking sheet, removing any unpopped kernels, and let cool.
  2. In a large bowl, toss slivered almonds and cacao nibs with popcorn.
  3. Drizzle mixture with coconut oil and honey, then stir to coat.
  4. Scoop out by the half cup and shape into a ball. Place in a muffin cup liner. Repeat until you have filled 16 muffin cups.
  5. Refrigerate to set.
