Don’t fret snacking. Between-meal munching might seem like breaking your healthy diet, but there’s no reason your snacks can’t be both irresistibly delicious and totally healthy! Enter Cauliflower Popcorn. Flavored coconut oil and nutritional yeast give these vegetable florets an authentic, I-can’t-believe-it’s-not-butter taste that will make your taste buds rejoice.

Cauliflower Popcorn

Serves 4
Macros per serving: 135 calories | 4.5 g fat | 11 g carbs | 5 g fiber | 9 g protein

Ingredients

3 Tbsp. Nutiva Buttery Coconut Oil
2 Tbsp. Nutiva Hemp Seeds
¼ cup nutritional yeast flakes
¾ tsp. Redmond Real Salt
1 head cauliflower, chopped into bite-sized pieces

Directions

  1. Preheat oven 375 degrees F.
  2. In large bowl, mix oil, hemp seeds, nutritional yeast and salt until combined.
  3. Add cauliflower to bowl and toss until pieces are well coated.
  4. On baking sheet, spread out cauliflower and bake for 20 minutes until golden.

Liana’s tips:

  • Short on time? Skip the baking and enjoy this recipe raw for a quick-and-easy alternative!
  • Nutiva Red Palm Oil, your go-to coconut oil, olive oil or sesame oil can be used in place of the buttery coconut oil.
  • Add 1-2 Tbsp. sesame seeds for extra flavor.
