Pomegranate-Pistachio Cheese Log

Not only is it absolutely stunning, featuring a beautiful holiday color combo, but it’s also beyond easy to make. Bonus: While it’s chilling in the fridge, you can get a bunch of your other cooking done. So pretty and unique, this appetizer is sure to wow your holiday guests.

Ingredients

8 oz. light cream cheese, at room temperature
1/2 cup Greek yogurt
2 tsp. maple syrup
2 tsp. Dijon mustard
1/2 tsp. garlic salt, adjust to taste
1/4 tsp. ground black pepper
1/4 cup pistachios, crushed
1/3 cup pomegranate arils
Crackers, for serving

Directions

  1. In large bowl, beat cream cheese with Greek yogurt until smooth and creamy. Add syrup, mustard, garlic salt and pepper and mix until well combined.
  2. Transfer mixture to plastic wrap and mold it into log form. Refrigerate 3 to 4 hours until firm. (Note: Freeze it for faster firming, if necessary.) Reshape log if form was lost during firming.
  3. On serving plate, arrange pistachios and pomegranate arils and roll log over them to coat.
  4. Refrigerate coated log several additional hours to chill. Serve with crackers.
