Cherry-Vanilla Macaroons

The French have le macaron, the crunchy, pastel-colored sandwich cookies you see in the most upscale bakeries. Though tasty, they’re nothing like an American macaroon. You may know the macaroon as a light-and-airy coconut delight. But this recipe is beaming with pride, thanks to its cherry-pie-like flavor. With their rich, dark-chocolate dip, these could become a national treasure.

Ingredients

¾ cup egg white liquid
½ cup almond milk
1 scoop whey protein powder (confetti, cake batter or vanilla flavors work best)
1 Tbsp. coconut oil, melted
1 ½ cup finely shredded coconut
Cherry-vanilla stevia to taste
½ cup dark chocolate chips

Directions

  1. In a small bowl, combine everything except the chocolate.
  2. Drop a spoonful of batter on a greased baking sheet and bake at 350 F for 10 minutes.
  3. Let cool while you melt the chocolate chips.
  4. Dip macaroons into melted chocolate and munch away!
