Simple Gourmet Chicken Salad

Have chicken left over from last night’s dinner? Turn it into today’s healthy lunch with a light chicken salad, eaten as is or tucked into a pita for a quick grab-and-go sandwich. Serves 2-4

Ingredients

1 pound cooked boneless, skinless chicken breast
3/4 cup vegan mayonnaise
1 Tbsp. spicy mustard
1 Tbsp. finely chopped fresh cilantro
1 large red apple, chopped
2 tsp. lemon juice
3 stalks celery, chopped
2 cups green grapes
4 cups mixed salad greens
Sea salt and pepper, to taste



Directions

1. Combine all ingredients in a large bowl; mix well to combine.

2. Serve chicken salad chilled.
