Chicken Salad (No Mayo)

Whether you’ve got an office potluck, backyard BBQ or picnic planned, chicken salad is sure to be on the menu. But there’s one hitch: mayo-drowned chicken salad is so overrated. Salvage your spread by tossing diced chicken with crunchy veggies, creamy avocado and a delicious dressing. Now this what your party needed! Use leftovers for lunch – this no-mayo, healthy chicken salad is great stuffed in lettuce wraps, toasted pitas or soft taco shells.

Makes approximately 4 cups

Ingredients

3 cups cooked chicken, cubed
1 medium/large avocado, diced (about 1 cup)
1 cup apple, diced
1/2 cup celery, diced

Dressing

2 Tbsp. olive oil
1 Tbsp. red wine vinegar
2 Tbsp. fresh lime juice
1/4 cup fresh cilantro, chopped
1/4 tsp. each salt, pepper and cayenne pepper

Directions

  1. In small bowl, whisk together dressing ingredients.
  2. In large bowl, combine chicken, avocado, apple and celery with dressing.
  3. Serve immediately or chill before serving.
