Salvage your spread by tossing diced chicken with crunchy veggies, creamy avocado and a delicious dressing. Now this what your party needed! Use leftovers for lunch – this no-mayo, healthy chicken salad is great stuffed in lettuce wraps, toasted pitas or soft taco shells.
Makes approximately 4 cups
3 cups cooked chicken, cubed
1 medium/large avocado, diced (about 1 cup)
1 cup apple, diced
1/2 cup celery, diced
2 Tbsp. olive oil
1 Tbsp. red wine vinegar
2 Tbsp. fresh lime juice
1/4 cup fresh cilantro, chopped
1/4 tsp. each salt, pepper and cayenne pepper
- In small bowl, whisk together dressing ingredients.
- In large bowl, combine chicken, avocado, apple and celery with dressing.
- Serve immediately or chill before serving.
