Chocolate-Cherry Pie Breakfast Oats

Maple and brown sugar, peaches ‘n’ cream, apple-cinnamon—oatmeal flavors lose their fun when you’ve been buying the same variety pack year after year for as long as you can remember. Make tomorrow’s breakfast a blast with this not-from-a-packet mix, made instantly with quick-cooking oats or overnight with original or steel cut versions. Chewy cherries, chocolate chips, chopped walnuts and a drizzle of homemade chocolate syrup blur the lines between healthy morning meal and sneaky breakfast indulgence. Tell yourself what you’d like—but plan on smiles all around the table when this simple creation is served!

Chocolate-Cherry Pie Breakfast Oats

Serves 1

Ingredients

1/3 cup + 2 Tbsp. quick-cooking oats
1 Tbsp. flax meal
1 tsp. cinnamon
1 Tbsp. stevia (or honey or agave)
½ tsp. vanilla
¼ cup unsweetened almond milk
2 Tbsp. plain Greek yogurt
Optional: pinch of salt

Toppings
8 cherries, pitted
6 chocolate chips
1 tsp. chocolate syrup
Optional: 3 walnuts, toasted and crushed

Directions

  1. In small bowl, combine first 8 ingredients. Cover and refrigerate for 20 minutes to soften oats. (Note: If using old-fashioned or steel cut oats, prepare in same way and let sit overnight.)
  2. Warm cherries in microwave for 10-15 seconds. Crush walnuts.
  3. Stir oat mixture well. (Note: If mixture is runny, add a tablespoon or two of quick-cooking oats and let sit a little longer. If using regular yogurt instead of Greek yogurt, reduce amount of almond milk to 2 Tbsp.)
  4. Add toppings and enjoy!
