Chocolate-Cherry Pie Breakfast Oats
Serves 1
Ingredients
1/3 cup + 2 Tbsp. quick-cooking oats
1 Tbsp. flax meal
1 tsp. cinnamon
1 Tbsp. stevia (or honey or agave)
½ tsp. vanilla
¼ cup unsweetened almond milk
2 Tbsp. plain Greek yogurt
Optional: pinch of salt
Toppings
8 cherries, pitted
6 chocolate chips
1 tsp. chocolate syrup
Optional: 3 walnuts, toasted and crushed
Directions
- In small bowl, combine first 8 ingredients. Cover and refrigerate for 20 minutes to soften oats. (Note: If using old-fashioned or steel cut oats, prepare in same way and let sit overnight.)
- Warm cherries in microwave for 10-15 seconds. Crush walnuts.
- Stir oat mixture well. (Note: If mixture is runny, add a tablespoon or two of quick-cooking oats and let sit a little longer. If using regular yogurt instead of Greek yogurt, reduce amount of almond milk to 2 Tbsp.)
- Add toppings and enjoy!
