Once the weather warms up, it’s time to get the grill going. Not sure what to make first? These skewers are a great way to hone your grilling skills because a flavorful chili-lime vinaigrette does most of the work. You’ll marinate chopped chicken for several hours and, before cooking, you’ll baste chunks of pepper, onion, tomato and pineapple with the same zesty dressing. Makes 4 skewers
Ingredients
1 lb. organic chicken, cut into bite-sized pieces
1 can organic pineapple chunks
½ red pepper, cut into 4 bite sized pieces
1 white or red onion, cut into bite sized pieces
2 small tomatoes, cut in half
1 bottle Hilary’s Chili-Lime Vinaigrette
2 Tbsp. cilantro
1 tsp. minced garlic
4 skewers
For serving
Hilary’s Ranch Chia Dressing
Lettuce or greens salad
Fresh cilantro
Directions
- In a plastic bag or shallow dish, marinate chicken in vinaigrette (use about 3/4 of bottle – reserve 1/4 for later) and cilantro.
- Stack skewer sticks with onion, tomato, pineapple, red pepper and marinated chicken. Brush remaining vinaigrette over skewers and sprinkle with minced garlic.
- Grill for 7-8 minutes on each side or until chicken is cooked through.
- Serve with lettuce or greens, Hilary’s Ranch Chia dressing and fresh cilantro.
