They always say breakfast is the most important meal of the day, but is it, really? Theoretically, you could skip it and wait for lunch – no big deal. You could even heed the hunger pains until dinner if you had to. So why is breakfast so necessary? Aside from the obvious nutritional benefits and boost to your metabolism, there’s one very good reason to eat when you wake up: cinnamon protein muffins. Topped with a dusting of coconut sugar and served warm, these are the cousins of cupcakes. It’s breakfast or bust!
Cinnamon Protein Muffins
Ingredients
1 cup buckwheat flour
3 scoops vanilla cupcake protein powder
1 tsp. baking powder
¼ cup honey
4 oz. unsweetened applesauce
2 tsp. cinnamon
¼ cup almond milk
2 eggs
Topping: coconut sugar + cinnamon
Directions
- Preheat oven to 350 degrees F and prepare a muffin pan with paper liners.
- In a large bowl, combine all ingredients and stir until smooth.
- Pour batter into prepared muffin pan, filling each cup about ¾ full. Top with cinnamon-sugar mixture.
- Bake approximately 25 minutes, or until a toothpick comes out clean.
