Coconut Grilled Eggplant

Ingredients
2 large eggplants, sliced lengthwise into 1-inch pieces
1-1/2 cups of olive oil
1 tsp. sea salt
3 Tbsp. honey
Juice of 1 fresh lemon
2 garlic cloves, minced
1/3 cup of shredded fresh mint
1 Tbsp. coconut flakes
1/4 tsp. red pepper flakes
1/4 tsp. pepper
1. Preheat grill to medium heat. In a large bowl, combine all ingredients; gently toss to combine. Transfer to the grill; cook for 7 to 8 minutes or until tender.
2. Remove from grill; serve.
