Roasted Brussels Sprouts and Broccoli

We’re giving the green light to this side dish. Broccoli and Brussels sprouts not only share the same beautiful green hue, but their textures make them ideal for soaking up sauces. In this recipe, the two hearty veggies are tossed with a “cheesy” (dairy-free!) sauce made from creamy sunflower seed butter and nutritional yeast. Pine nuts are sprinkled in for a little extra crunch. Eating your greens has never tasted so good.

Roasted Brussels Sprouts and Broccoli

Instructions

  1. Preheat oven to 325 degrees F.
  2. In large bowl, mix together sunflower seed butter, nutritional yeast, olive oil, salt and thyme until well combined. Stir in broccoli, Brussels sprouts and pine nuts until fully coated.
  3. Arrange mixture on baking tray; bake 20 to 25 minutes, until golden brown.
