There’s a new watermelon salad on the menu this season, and it’s tossed with mozzarella, basil and balsamic glaze. Just like other fruit salads, this one is light, refreshing and sweet. But, thanks to its savory add-ins, it has a robust, tangy flavor and a heartier texture than fruit-only dishes. A winner whether placed on the kids’ or adults’ tables, this delectable watermelon mozzarella salad will bring zest to your spread.

Watermelon Mozzarella Salad with Balsamic Glaze

  1. In a medium saucepan over medium-high heat, bring balsamic vinegar and coconut sugar to a boil. Reduce heat to medium and let the mixture simmer for 8-10 minutes or until it thickens to a syrupy consistency. Stir often to prevent burning.
  2. Using a melon baller, scoop out about 4 cups of small watermelon balls and place in large bowl.
  3. In small bowl, combine lime juice, olive oil and maple syrup. Pour over watermelon balls.
  4. Add basil (I used ¼ cup) and mozzarella to bowl with watermelon and toss to combine.

  5. Drizzle with balsamic glaze (I used about 2 Tbsp.) and sprinkle with salt and pepper to taste. Serve immediately.
