According to its French roots, “macaroon” means “to crush,” which makes perfect sense considering how your heart will crumble for this soft-and-sweet cookie. The flourless confection is so light you won’t hesitate to indulge whenever the mood strikes. Had a bad day? Eat a macaroon. Good day? Celebrate with this coconut cookie. What about Tuesday? Yep, sounds like the best time for a macaroon! You could spend hours making up excuses to enjoy these chocolate-drizzled treats. But, honestly, you only need one good reason: protein in a low-carb cookie will help you crush goals.

Cookies

3 scoops (about 75 g) vanilla protein powder
3/4 cup unsweetened coconut flakes
1 Tbsp. honey
2 egg whites

Drizzle: white chocolate, melted

Directions

  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper or coat it coconut oil.
  2. In a medium bowl, mix together all cookie ingredients until well combined.
  3. Spoon batter onto prepared baking sheet, dropping about 1-2 tablespoons per cookie. Bake 10 minutes, being careful not to overcook.
  4. Once cool, drizzle melted white chocolate over cookies.
