Creamy Tomato Sauce with Zesty Coconut Garlic Bread

Creamy, superfood-infused tomato sauce, black bean “meatballs” and penne noodles might be the main attraction, but a side of homemade garlic bread will also get guests cheering. Made with sprinkles of shredded coconut, this bread takes your meal from cozy and comforting to exciting and awe-inspiring.

Serves 6

Ingredients

Tomato Sauce

2 lb. roasted tomatoes
2 Tbsp. dried basil
1 Tbsp. garlic powder
2 Tbsp. coconut oil
1/4 cup yellow onion, diced
Himalayan pink salt & black pepper, to taste
Penne pasta
1 lb. Vegan Black Bean & Oat “Meat” Balls, optional

2 tomatoes, quartered
1/2 cup raw cashews
2 Tbsp. hemp seeds, plus more for topping
1 Tbsp. ground chia seeds
1 orange bell pepper, diced
Himalayan pink salt & black pepper, to taste
2 lemons, squeezed

Zesty Coconut Garlic Bread

1 loaf sourdough bread, sliced
Coconut oil, melted
Garlic powder
Chili pepper flakes
Shredded coconut
Himalayan pink salt & black pepper

Directions

  1. To prepare pasta sauce, heat large sauce pan over medium heat. Add coconut oil and onion and cook for 3-5 minutes or until soft. Gently stir in tomatoes and seasonings. Cover and cook for 10 minutes.
  2. Meanwhile, prepare cashew paste. In a high-speed blender, combine all ingredients and blend until smooth.
  3. Add cashew paste and “meat” balls (if using) to sauce and stir until combined. Cover and let simmer over low heat for 10-15 minutes.
  4. Serve over pasta and top with additional hemp seeds.
  5. To prepare garlic bread, preheat oven to 425 degrees F.
  6. Place slices on non-stick baking sheet. Drizzle coconut oil over each slice and sprinkle with garlic, chili pepper flakes, coconut, salt and pepper. Bake for 8-10 minutes or until golden brown.
  7. To serve, pour creamy sauce over pasta, top with additional hemp seeds with a side of garlic bread.
