Using only three ingredients, this short-and-sweet recipe combines rich dark chocolate with crunchy pistachios and tart cranberries for a junk-food-free treat. Serves 4-8
Ingredients
8 oz. dark chocolate
1/2 cup raw shelled pistachios, chopped
¼ cup + 2 Tbsp. Vitacost Organic Cranberries, chopped
Optional
2 Tbsp. goji berries, chopped
Himalayan pink salt
Directions
1. Using double boiler, melt chocolate into liquid consistency. Stir in pistachios and dried fruit. Mix well and remove from heat.
2. Line baking sheet with parchment paper. Pour mixture onto baking sheet and use spatula to spread evenly into thin layer. If using, grind a pinch of Himalayan pink salt on top.
3. Refrigerate or freeze at least 30 minutes to harden and solidify. Once solid, break off or chop into pieces.
