No-Bake Sunflower Butter & Chocolate Bars (Vegan & Paleo)
If you’re looking for a sweet treat that’s full of good-for-you ingredients, try these bars. Sunflower butter is a protein-rich, allergen-free alternative to nut butters, while tiger nut flour (which comes from a root vegetable!) is a nutritious, gluten-free flour alternative with a mild sweetness and prebiotic benefits. Plus, they’re made satisfyingly sweet with date syrup and not refined sugars! Whip up a batch in less than 10 minutes.
No-Bake Sunflower Butter & Chocolate Bars (Vegan & Paleo)
Bars
- 1 cup sunflower seed butter
- 1 cup tiger nut flour
- ½ cup date syrup
- ½ tsp. vanilla extract
- ¼ tsp. pink salt
- ¼ cup coconut milk (or non-dairy milk of choice (plus more if needed))
Topping
- 2-3 oz. dark chocolate (melted)
- Optional: Sea salt flakes
- In large bowl, stir together all bar ingredients to combine thoroughly. If dry or crumbly and not holding together, add more milk, 1 tablespoon at a time.
- In 6-inch square baking dish, press down mixture evenly.
- Fully cover with melted chocolate. Sprinkle on salt, if desired.
- Refrigerate 2 hours, or freeze 1 hour. Slice into bars to serve.
