We could all use a little more chocolate right about now. So why not have some for breakfast? We don’t mean crunchy cocoa cereal or chip-studded muffins. Dig your fork into a stack of these cocoa-licious pancakes for a delightfully indulgent – yet healthy! – morning meal. Dairy free, gluten-free, grain free – they’re way better than frozen flapjacks or what you’d get from a boxed mix. Dark Chocolate Chip Pancakes (Vegan & Gluten-Free)

Ingredients

Optional toppings

  • Butter or ghee
  • Nut butters
  • Coconut cream
  • Blueberries
  • Cinnamon
  • Nuts

Instructions

  1. In large bowl, mix together milk, coconut oil, vanilla and “eggs.”
  2. In separate bowl, stir together flour, cocoa, stevia/monk fruit and salt. Sift dry mixture into wet mixture and whisk well. Stir in chocolate chips last, if using.
  3. In frying pan or on griddle heated to medium-high, melt coconut oil. Ladle on small circles of batter. When edges start to bubble, flip and continue cooking. Repeat until all batter is used.
