Dairy free, gluten-free, grain free – they’re way better than frozen flapjacks or what you’d get from a boxed mix. Stir in some dark chocolate chips and consider your cravings conquered!

Dark Chocolate Chip Pancakes (Vegan & Gluten-Free)

Ingredients
- 1 cup grain-free flour or Mac-n-Mo’s Morselicious Mix
- 1/2 cup unsweetened cocoa powder
- Pinch monk fruit or stevia
- 3/4 cup unsweetened vanilla macadamia milk
- 2 Tbsp. extra virgin coconut oil
- 1 Tbsp. vanilla
- Pinch sea salt
- 2 chia/flax “eggs”
- 1/3 cup dark chocolate chips optional
Optional toppings
- Butter or ghee
- Nut butters
- Coconut cream
- Blueberries
- Cinnamon
- Nuts
Instructions

In large bowl, mix together milk, coconut oil, vanilla and “eggs.”

In separate bowl, stir together flour, cocoa, stevia/monk fruit and salt. Sift dry mixture into wet mixture and whisk well. Stir in chocolate chips last, if using.

In frying pan or on griddle heated to medium-high, melt coconut oil. Ladle on small circles of batter. When edges start to bubble, flip and continue cooking. Repeat until all batter is used.
