Easter Sugar Cookies with Naturally Colored Icing

Spring just isn’t spring without newly bloomed tulips, freshly cut grass and pastel-frosted sugar cookies cut into the shape of playful bunny rabbits and eggs. Even if you’re staring at a pile of snow instead of a vibrant spring bloom, you can still embrace the season with these colorful cookies — they’re made with simple ingredients and naturally colored frosting for a memorable treat both kids and adults will love.

Ingredients
Makes 24-30 cookies

Cookies
3 cups Simple Truth Almond Flour 
1 teaspoon baking powder
1/2 teaspoon salt 
1/2 cup Simple Truth Organic Unsalted Butter, softened
1/2 cup cream cheese, softened
1 cup Simple Truth Organic Granulated Sugar 
1/2 cup Simple Truth Organic Powdered Sugar 
2 eggs, plus 1 egg yolk
1 teaspoon vanilla extract

Colorful icing
2½ cups powdered sugar 
1 tablespoon 2% milk, more if needed
2 teaspoons light corn syrup 
½ teaspoon almond extract 
assorted natural food coloring

Directions

To make cookies:

1. Preheat oven to 350 degrees F.
2. In bowl, whisk flour, baking powder and salt; set aside.
3. Cream butter, cream cheese, sugar and powdered sugar until light and fluffy.
4. In separate bowl, lightly mix together eggs and vanilla. 
5. With the mixer running on medium low, slowly add egg mixture to creamed butter mixture, continue mixing until combined.  Turn off mixer, using a sturdy spatula gradually fold dry mixture into wet mixture and continue to fold until combined.
6. Divide the dough into four flat discs and wrap in cellophane and refrigerate for at least 3 hours.
7. Remove chilled dough one disc at a time and roll on a lightly floured surface into 1/4 inch thickness.
8. Cut into desired shapes using cookie cutters.
9. Bake cookies for about 8-10 minutes. Allow to cool before frosting.

To make icing:
1. In a small bowl, stir together powdered sugar and milk until smooth.
2. Beat in corn syrup and almond extract until icing is smooth and glossy.
3. Divide into separate bowls, and add food colorings to each to desired intensity.
4. Spread icing over cooled cookies.
