Easy, 3-Step Chocolate-Coconut Balls (Raw & Gluten Free)

Desserts that are as easy as 1-2-3 (think no-bake, instant-pudding pie mixes) usually come with a catch: chemical ingredients that taste too good to be true and create unrealistically fluffy textures. For something sweet, simple and good for you—roll together these coconut-sprinkled chocolate balls, made with 100% natural, gluten-free and raw ingredients, instead.

Chocolate-Coconut Balls

No-Bake Chocolate-Coconut Balls (Raw, Vegan & Gluten Free)

1 cup almond meal
1 cup cacao powder
3 Tbsp. maple syrup or honey*
1-1/2 Tbsp. water
1 tsp. coconut oil
5 Tbsp. finely shaved coconut flakes or hemp seeds

*Honey is not vegan. To make the recipe vegan, use maple syrup.

Directions

  1. In a large bowl, mix together the cacao powder and almond meal. Stir in honey, coconut oil and water; stir to combine.
  2.  Roll mixture into balls (add more water if additional moisture is needed).
  3. Roll balls in shaved coconut or hemp seeds.
