Ever noticed how things come in threes? Sometimes it’s bad news or a string of bad luck, like when you spill coffee on your shirt, trip over a shoe at the front door and forget to grab your lunch box all before 9 a.m. Well, not this time. When you can make a stack of protein pancakes with only three ingredients, life is good – really flippin’ good! The chocolate, peanut butter and pumpkin flavors may have a little to do with it, too. And here’s how the good gets better: these flap jacks are so low-carb, you can eat every single one.

Ingredients

2/3 scoop chocolate peanut butter protein powder
2 Tbsp. canned pumpkin puree
¼ cup liquid egg whites

Topping (optional)

Creamy peanut butter

Directions

  1. In a medium bowl, mix together all (three!) ingredients until smooth and well combined.
  2. Coat a skillet in non-stick cooking spray and turn stovetop to medium heat.
  3. Slowly pour about ¼-cup batter per pancake onto preheated skillet. Cook approximately 2 minutes, flip and cook until brown.
  4. Serve topped with melted peanut butter or maple syrup.
