Authentic falafel calls for dried chickpeas that need to be soaked overnight, but this quickie version can be made with canned chickpeas, and is just as big on flavor. Use an air fryer for a healthy upgrade that results in tasty falafel with a golden crisp crust. Pair it with tahini, hummus, and your favorite roasted veggies or salads for a complete meal.

Air Fryer Sweet Potato Falafel

Instructions

  1. To soften diced sweet potato, microwave for 3-5 minutes. You can also use a steaming method by filling a pot with one inch of water, placing a steamer basket filled with potatoes on top and covering for about 10 minutes, until sweet potatoes are soft.
  2. In blender, combine all ingredients and blend until smooth (slightly chunky is OK).
  3. Transfer mixture to bowl and refrigerate for at least 1 hour to firm.
  4. Spoon about 1 tablespoon or so into hand and roll into 1-inch-thick ball. Repeat with remaining dough.
  5. Air fry at 375 degrees F for 15-18 minutes.
  6. Serve with tahini, hummus and your favorite veggies.

Recipe Notes

  • *If using organic sweet potato, leave the skin on for added fiber and nutrients. If not, simply peel it before cubing.
  • No air fryer? No problem! Bake falafel in oven at 375 degrees F for 25-30 minutes. They’ll be slightly less crispy, but just as delicious! If your oven has a fan, turn it on to help the hot air circulate (this will yield crispier falafel!).
