Tempeh Lettuce Wraps with Roasted Red Pepper Tahini Dipping Sauce

Fresh, crisp and light, these easy-to-make lettuce wraps are perfect for a quick homemade lunch or savory midday snack. Start with a large hearty lettuce leaf and fill it with veggies, gently cooked tempeh and as much sauce as you desire. If preparing the night before, store dressing in small airtight container and pack filling ingredients separately. When hunger strikes, whip out this healthy spread and assemble your wraps!

Tempeh Lettuce Wraps with Roasted Red Pepper Tahini Dipping Sauce

Ingredients

Wraps

  • 1 block organic tempeh
  • 1 medium carrot, thinly sliced
  • 2-3 celery sticks, thinly sliced
  • 3-4 large lettuce leaves
  • 1-2 Tbsp. sesame oil or coconut oil

Dipping sauce

Instructions

  1. Slice tempeh into thin strips. In bowl, toss tempeh with oil. Transfer to saucepan over medium heat and cook until brown.
  2. In the meantime, prepare dipping sauce. In food processor or high-speed blender, combine all sauce ingredients until creamy. (If mixture becomes too thick, add more water little by little until desired consistency is reached.) Transfer to bowl, garnish and set aside.
  3. To serve, arrange carrots, celery, tempeh strips and lettuce leaves on platter with dipping sauce. Assemble wraps.
