Rainbow-Sprinkled Cookie Dough Balls

Who needs a birthday cake when you can eat edible cookie dough balls with rainbow sprinkles? This recipe is much easier to make than a cake and features a few upgraded ingredients, including white chocolate peanut butter, cashew milk and plant-based protein powder. And in case the undeniably doughy consistency isn’t enough, each bite offers 6 grams of protein. That could be the best gift of all!

Rainbow-Sprinkled Cookie Dough Balls

Makes 16 bites
Macros per bite: 136 calories | 6 g protein | 12 g carbs | 8 g fat | 1 g fiber

Ingredients

½ cup white chocolate peanut butter
¼ cup oat flour
¼ cup coconut flour
½ cup Plant Fusion Vanilla Bean Protein Powder
¼ cup unsweetened cashew milk
2 Tbsp. agave nectar
2 Tbsp. powdered stevia
1 tsp. vanilla extract
½ tsp. butter extract
Pinch of salt
3 Tbsp. multi-colored sprinkles

Directions

  1. In a large bowl using a hand mixer, add all ingredients (except sprinkles) and mix until smooth and well combined.
  2. Once dough consistency forms, fold in sprinkles and stir to incorporate.
  3. Roll dough into balls, making about 16.
  4. Store in refrigerator until ready to eat.
