Strawberry Fields forever—or strawberry farro salad forever! There’s nothing to get hung about when you’ve got this delicious salad on your plate. Chewy farro adds heartiness to the strawberry and basil sweetness, and it’s all topped off with a tangy, tart dressing. Enjoy this dish forever and ever!
2 cups organic farro
4 cups water
1/2 cup toasted sliced almonds
1 lb. fresh strawberries, sliced
2 oz. basil, chopped
1/2 cup light olive oil or canola oil
2 Tbsp. lemon juice
2 Tbsp. minced shallot
1 Tbsp. honey
1 Tbsp. balsamic vinegar
1 tsp. Dijon mustard
1 tsp. poppy seeds
1/2 tsp. salt
- Cook farro according to package directions. Store chilled while preparing dressing and salad.
- Prepare dressing. In a blender or food processor, combine all ingredients except for oil and process until smooth. Stream in oil and mix until creamy. Store chilled.
- In large serving bowl, combine cooked farro with almonds and strawberries. Mix in dressing and basil.
- Serve at room temperature or chilled.
