If your favorite restaurant dessert is a warm apple crisp or you count down to any holiday that gives you an excuse to eat apple pie, this recipe is for you. These delectable fried apples are complemented by vanilla and cinnamon, and coconut flour and pecans give the dish a little crunch. Top it off with vanilla cashew or coconut cream, and you’ve got yourself a wholesome and delicious breakfast or dessert.
Ingredients
1/2 cup coconut flour
3 tsp. vanilla
2 Tbsp. coconut oil
2 Tbsp. cinnamon
3 medium-large Granny Smith or Fuji apples, sliced or diced
1/2 cup pecans, chopped and toasted
Vanilla coconut cream or vanilla cashew cream (optional)
Directions
- In cast-iron skillet, over medium heat, add vanilla, coconut oil, cinnamon and apples and let simmer until bubbly and brown.
- Stir in coconut flour and toasted pecans to form a crumbly texture. Cover for a few minutes.
- Optional: Before serving, top with dollop of vanilla coconut or cashew cream and extra sprinkle of pecans.
