Frosted Sweetheart Sugar Cookies

1 Quest Lemon Cream Pie Protein Bar, torn into pieces
1 scoop Quest Vanilla Milkshake Protein Powder
¼ cup coconut flour
2 Tbsp. almond milk
1/3 cup liquid egg whites
1 tsp. baking powder
¼ tsp. salt
1 capful almond extract
¼ tsp. cinnamon
Frosting
1 Tbsp. Sweet Spreads White Chocolate Coconutter
1 Tbsp. Sweet It Syrup
1 Tbsp. Sweet It Powder
1 Tbsp. Swerve Erythritol Confectioners Style
4 oz. fat-free cream cheese
1 capful almond extract
Directions
- Preheat oven to 350 degrees F and cover a cookie sheet with Silpat or non-stick cooking spray.
- Microwave Quest bar pieces with almond milk for 30 seconds. Stir until smooth and blended. Repeat if necessary.
- Add remaining ingredients and stir until well-combined. Divide and roll batter into 8 balls.
- Place balls on cookie sheet and flatten slightly. Using a heart-shaped cookie cutter, shape balls into hearts. You could also simply press the balls into the cookie cutter to form the hearts, which would prevent any excess dough.
- Bake cookies about 7 minutes. Remove and let cool while you prepare the frosting.
- In a medium bowl, combine Sweet Spreads and Sweet It Syrup. Microwave for 30 seconds and stir until smooth.
- Add remaining ingredients and whisk until smooth. You can also add everything to a blender and process until smooth and combined.
- Once cookies have cooled, frost each cookie with about 1 teaspoon of frosting mixture, garnish with sprinkles and tell your honey eat his heart out!
