Gluten-Free Banana Pancakes
Makes 3 pancakes
Ingredients
1 banana
1/3 cup TigerNut flour
1 egg
¼ tsp. vanilla
1/8 tsp. Redmond Real Salt
½ Tbsp. tapioca
½ tsp. Redmond Bentonite Clay
1/8 tsp. baking soda
1 Tbsp. Nutiva Organic Coconut Oil with Buttery Flavor, for cooking
Directions
- In a medium bowl, mash banana until smooth. Add egg and mix well. Add remaining ingredients except for coconut oil and mix until combined.
- In a frying pan over medium-low, heat coconut oil. Add a third of pancake batter. Cook until brown and then flip over. Repeat twice more.
- Serve with desired toppings, such as maple syrup, TigerNuts, walnuts and fresh berries.
