Ingredients
- 1 small onion halved & thinly sliced
- 1 8- oz. pkg. sliced mushrooms fresh
- 2 Tbsp. olive oil
- 1 cup baby spinach fresh
- 2 cups roasted butternut squash or frozen cubed squash thawed
- 1/2 loaf day-old Simple Mills Artisan Bread Mix prepared as directed
- 8 eggs whisked with salt & pepper
- Dried Italian seasoning or minced fresh herbs for garnish
Optional: 1 cup shredded mozzarella cheese
Instructions

Preheat oven to 375 degrees F and grease 9x13 baking dish.

In medium pan over medium heat, sautee onions and mushrooms in olive oil until tender.

Add spinach during last minute of cooking and season to taste with salt and pepper.

Place butternut squash in prepared baking dish. In this order, top with cooked veggies, shredded mozzarella and bread cubes, pushing the cubes down into veggies.

Pour whisked eggs evenly over ingredients in baking dish, moistening bread cubes in process.

Top with dried Italian seasoning or fresh herbs.

Bake 30 minutes or until cooked through.
