Not only is this recipe free of dairy and gluten, but it can be easily made vegan by using a flax egg (or your favorite egg replacer). Top with any variety of yogurt (we suggest pumpkin spice!) for a little extra something on top along with pure maple syrup for a sweet and shiny finish!
Maca Pancakes with Sautéed Cinnamon Apples & Pumpkin Spice Yogurt

Ingredients
Pancakes
- 1/2 cup Vitacost Organic Coconut Flour
- 1 egg
- 1/4 cup apple sauce
- 1 Tbsp. maca powder
- 1/2 tsp. Vitacost Organic Cinnamon
- 1 cup almond milk
- 1 tsp. coconut sugar
- Pinch salt
- Splash water, if needed
Topping
- 1 apple diced
- 1/2 tsp. cinnamon
- Pumpkin yogurt or flavor of choice
- Vitacost Organic Coconut Oil
- Pinch sea salt
Instructions
Topping

In pan over medium heat, warm a little coconut oil. Add apples and cinnamon. Mix well and cook 3-5 minutes. Set to aside.
Pancakes

In bowl, combine all pancakes ingredients and mix well. Slowly add additional milk as needed until batter consistency is reached.

In large skillet over medium heat, warm a little coconut oil. Pour in pancake batter about 1/4 cup at a time. Cook 1 minute per side.

To serve, stack pancakes and top with sautéed apples, yogurt and syrup.
