6-Ingredient Gluten-Free Cherry Cobbler
- 6 Tbsp. melted butter (or coconut oil*)
- 2 cups oat flour
- 2 cups almond meal
- 2 cups coconut milk*
- 1-1/2 cup coconut sugar
- 2 (16 oz. bags) pitted frozen dark sweet cherries
- Preheat oven to 350 degrees F. Pour butter or coconut oil into 9x13-in. baking dish.
- In large mixing bowl, whisk together oat flour, almond meal, coconut milk and coconut sugar until smooth. Pour batter into baking dish with butter (no need to mix).
- Drop cherries on top of batter, press them down gently, and bake for 1 hour and 15 minutes to 1 hour and 30 minutes, or until cobbler is cooked throughout and edges are golden brown.
- *To make vegan cobbler, either use coconut oil in place of butter, or use a plant-based butter.
- **You can use any type of full-fat milk for this recipe, including cashew milk, oat milk or grass-fed dairy milk.
